Potato salad with pork salami
Serves 8
Ingredients
1 kg boiled charlotte potatoes
2 tbsp mayonaise
2 tbsp yogurt
1 tsp mustard
very thinly sliced red onion
chopped chives and chive flowers
chopped dill
100g Scottish Pork Salami sliced in matchstick size
sea salt and black pepper
Method
Mix the yoghurt, mayonaise and mustard to make a dressing. Season with salt and pepper. Add the potatoes, onions and most of the eggs, herbs and salami and mix well.
Serve in a wide bowl or on a large plate and sprinkle the remainder of the herbs, eggs, chive flowers and salami on top.
