‘The taste and fragrance coming from the black kampot peppers was delightful, the product is seasoned very well and has a great balance to it. The meat and savoury notes are there and we felt as judges that the venison and pork paired nicely, which aids the colour, texture and lightness of salami.”


”This is a dark pink salami with attractive black peppercorns and even fat marbling. There are moist slices with a fruity, almost floral aroma. It has a meatily moreish, melt-in-the-mouth texture. The meaty flavour isn't overpowered by the venison, and the pepper comes through afterwards to give a pleasing long aftertaste.”
