Venison Salami, Radicchio and blue cheese Salad

Serves 2-4


Ingredients

Venison salami
radicchio
Blue cheese
Apple
A handful of toasted walnuts, roughly chopped

100ml olive oil

2 tbs red wine vinegar

2 tbs runny honey


Method

Roast the walnuts for 10 min or until golden brown in a warm oven. Set aside to cool slightly.

Make a dressing of 80ml oil, vinegar and a tablespoon of honey and season to taste.

Heat the remaining oil and honey in a frying pan over a medium heat and add the walnuts. Sir for about 5 min until caramelised.

Please the radicchio leaves on a platter and top with the venison salami, thinly sliced apple and crumbled blue cheese. Sprinkle with the walnuts and drizzle with the dressing before serving.
